After Corsica I headed over to Spain for three days to the beautiful Sha Wellness Clinic. People visit ShaWellness to detox, lose weight, and enjoy the spa. The spa is known for its amazing Macrobiotic food and state of the art spa and medical services. The scenery is amazing and the weather was perfect. The spa offers three menus, a restricted calorie menu, a lite vegan macrobiotic menu, and a gourmet macrobiotic menu. I tasted food from all the menu’s and have nothing but praise for the Chef. I wasn’t there to lose weight however, if I was to recommend a beautiful place to shed a few pounds and relax I would highly recommend the Macrobiotic diet the spa has to offer.
While I was there,I took a cooking class with the in house Macrobiotic Chef, Angela. Angela is from a town just outside of Milan. She reminded me so much of my Nonna. She is very relaxed in the kitchen and cooks with love and intuition. She has been cooking for over 30 years and is now in charge of the vegan and detox menu. Below is a recipe for her delicious thumbprint cookies
ShaWellness Jelly Thumbprint cookies by Angela
1 cup raw oats, 1 cup almonds or hazelnuts, 1 cup spelt flour, 1/3 cup maple syrup, 1/3 cup sunflower oil, pinch of salt, pinch of cream of tartar, jam of choice.
Grind the nuts in a food processor and add oats. Place mixture in a bowl and add flour, salt, and cream of tartar.
Add oil and roll mixture by hand.
Add syrup and stir with fork.
Roll in hand into balls being careful not to handle the mixture too much. Imprint cookie with thumb and add a touch of your favorite jam.
Bake 180c for 12 minutes
